The monotony of eating the same has gone away. But something great is possible with cooked rice. This simple coriander and veggie rice is a delicious combination of a few vegetables with rice and a fun Thai green paste.
Coriander veg rice materials
(1) Cooked rice of any rice - 1 cup
(2) Carrot slices, green capsicum slices, peas - 1/2 cup
(3) Onion pieces
(4) Cherry tomato pieces
(5) Thai green paste - 2 tbsp
(6) Black pepper powder - 1 teaspoon
(6) Dried chilli powder - 1 teaspoon (more or less can be done)
(6) Lemon juice - 2 teaspoons
(9) 3 tablespoons of butter
(10) Salt tastes like
Everything you need to make Thai green paste -
(1) 1 handful of finely chopped coriander leaves
(2) Add 1 teaspoon coriander
(3) Half a cup of garlic
(4) Grate 1 lemon zest or skin grater
(5) Thai leaves / Lemon grass 2 sticks
(6) Less salt
(6) 1 onion
(6) 2-3 hours of raw chillies
(9) 3 tablespoons lemon juice
Grind some of these very well in a blender.
Method
Put green onion curry paste with oil in a pan. Now cook all the vegetables and cooked rice one by one like salt and fried rice. I cooked on a very low flame. After a while, you can serve this fun rice, down chicken fry or curry of your choice!
