Easy nigerian jollof rice recipe

 

  1.     3 cups of polao rice / basmati rice
  2.     1 cup of finely chopped onion
  3.     Capsicum (red) small cubes and a half cups
  4.     2 cups of tomato pieces
  5.     5 to 6 vegetable stock cubes (it contains a lot of salt, extra salt when you add salt but try it)
  6.     1 large piece of Bombay Pepper (Exclude if the kids have a tiffin, it tastes very good when given, it can be done without it if you don't like salt)
  7.     4 tablespoons of tomato paste
  8.     Salt to taste
  9.     1/4 cup of oil

 

Nigerian jollof rice method


First make a paste of tomato paste, Bombay pepper, capsicum (red) cubes with a little water in a blender.

Now when the oil is hot with the oil, grate the onion, fry the onion brown, add the tomato pieces, cook for 10 to 12 minutes. Now grind the vegetable stock into cubes by hand (it has a lot of salt in it, add extra salt when you add salt but try it), stir in the tomato paste prepared earlier, add rice for a while, mix well and add hot water ( I have added 3 cups of rice to 5 cups of water, macha macha but if you want to make it very neat like polao then you have to add a little less water) and add salt to taste and cook till the rice is cooked, take it down and serve hot This ayanpot dish with salad!

If you want this rice, you can cook it for 2 to 3 days and keep it in the fridge, you can take it to the office as a lunch with a fresh salad or boiled egg with a moderate amount of rice in the lunch box!
