home is a must for these days. So today I came up with a fun recipe for you. Who doesn't love to eat polao, if it is a little different then but more fun to eat! And Eid says that we should not cook food in oil. As a healthy and safe oil we can use safola active oil which is mostly safe for our body, as it contains oregano and omega-3 which helps in reducing excess weight and reducing bad cholesterol. Eighty percent of its rice bran oil is very beneficial for health.

Materials


  1.     Onion sprouts - 2 cups
  2.     Saffola Active Oil - 1.5 cups
  3.     Water - 4/5 cup
  4.     Salt - 2.5
  5.     Mutton - 500 gms
  6.     Garlic paste - 2 tablespoons
  7.     Hot spices - 1 teaspoon
  8.     Cardamom powder - 1 teaspoon
  9.     Sugar - 2/3 tablespoon
  10.     Carrots - 1 cup (Julien Cut)
  11.     Raisins - 1/4 cup
  12.     Boiled polao rice - 1 kg

1) First take a little saffron active oil in a pan and add 1 cup of onion and keep frying till it becomes light golden color. Now lightly stir fry it with mutton. Cook with garlic paste until the meat changes color. Be careful not to burn the meat.

2) Now add water and salt. Put in the oven until the water is half. Once the meat stock is ready, separate the meat from it. Cook the stock further until it is equal to the amount of 1-1.5 cups. When done, strain the stock and keep it in a separate bowl.

3) Now caramelize it with sugar in another frying pan. Now pour the meat stock in it. Now add 1.5 teaspoons of hot spices and cardamom powder and shake well.

4) Now take another pan and fry it in oil and onion until golden again. Now fry the boiled meat in it for 3-4 minutes.

5) In another pan with oil, add carrots, raisins and 2-3 tablespoons of sugar and fry for 2-3 minutes.

7) In the last part, put pre-boiled polao rice in a pot and put mutton stock in it. Add the remaining hot spices and cardamom powder and fried meat one by one. Put carrot and raisin mixture on it. Now cover the pot with a heavy cloth. Put the lid on it. Let it simmer for 10-15 minutes. When done, top with raisins and almonds during serving.
