Afghani pulao with mutton recipe
1) First take a little saffron active oil in a pan and add 1 cup of onion and keep frying till it becomes light golden color. Now lightly stir fry it with mutton. Cook with garlic paste until the meat changes color. Be careful not to burn the meat.
2) Now add water and salt. Put in the oven until the water is half. Once the meat stock is ready, separate the meat from it. Cook the stock further until it is equal to the amount of 1-1.5 cups. When done, strain the stock and keep it in a separate bowl.
3) Now caramelize it with sugar in another frying pan. Now pour the meat stock in it. Now add 1.5 teaspoons of hot spices and cardamom powder and shake well.
4) Now take another pan and fry it in oil and onion until golden again. Now fry the boiled meat in it for 3-4 minutes.
5) In another pan with oil, add carrots, raisins and 2-3 tablespoons of sugar and fry for 2-3 minutes.
7) In the last part, put pre-boiled polao rice in a pot and put mutton stock in it. Add the remaining hot spices and cardamom powder and fried meat one by one. Put carrot and raisin mixture on it. Now cover the pot with a heavy cloth. Put the lid on it. Let it simmer for 10-15 minutes. When done, top with raisins and almonds during serving.
